No-Bake Peanut Butter Energy Balls

This little energy balls are simple, filling and customizable! Keep them in your fridge for a quick snack, breakfast-on-the-go or afternoon pick-me-up!

No-Bake Peanut Butter Energy Balls

Ingredients:

1/2 cup peanut butter

1/4-1/3 cup of honey *I prefer them less sweet so I use a 1/4 cup

1/2 cup ground flax seeds

2/3 cup shredded coconut

1 cup oats *either old-fashioned or quick oats work

1/2 cup chocolate chips (see note)

Pinch of salt (optional)

Directions:

1- In a large bowl, mix the peanut butter and the honey until combined.

2- Add the ground flax seeds, coconuts, oats and salt (if using). Stir until combined. Fold in the chocolate chips. Place the bowl in the fridge for about an hour so the mixture firms up.

3-Using a cookie scoop or spoon (or eyeball it), roll the mixture into tablespoon-sized balls. I usually get about 12-18 balls depending on how precisely I roll them. They will last in the fridge for about a week.

Note: If you don’t like chocolate chips, you can swap them out for dried fruit like dried cranberries, cherries or raisins. You can even swap them out for chopped peanuts if you like! Adding 1/2 a teaspoon of cinnamon and or 1 teaspoon of vanilla extract is also a really nice addition!
