Ted Lasso shortbread à la Kelly

Ted Lasso is one of my favorite shows! A really special storyline in the show is Biscuits with the Boss where the main character Ted brings his boss, Rebecca a little pink box of shortbread cookies every day. There is an official Ted Lasso shortbread recipe (linked here). It is great as is but there are a few tweaks that I make to this recipe to it. Try to two versions and let me know what you think!

Ted Lasso Shortbread à la Kelly

Ingredients:

  • 1 cup (227 grams) unsalted butter, softened

  • 3/4 cup powdered sugar

  • 2 cups all-purpose flour

  • 1/2 teaspoon kosher salt

  • 1 tbsp vanilla extract

  • Flaky salt

Directions:

  1. Line a 8-inch square pan (or a 9-inch square pan) with parchment paper leaving a little overhang on either side so you can pull them out of the pan easier.

  2. In a large bowl, whisk softened butter until smooth and creamy. Add the powdered sugar and mix until pale and fluffy. Whisk in vanilla extract and kosher salt.

  3. Sift the flour over the butter mixture and switching to a silicone spatula, mix in the flour until just combined (just as the last flour streak is mixed in). Press the dough into the prepared pan, smoothing the top with an off-set spatula.

  4. Refrigerate for at least 30 minutes, ideally 45 minutes to one hour. While the dough is chilling, preheat your oven to 300 degrees.

  5. Cut the dough into squares or rectangles and dock the surface with a fork. Sprinkle the top with the flaky salt. Bake for 45-60 minutes until golden-brown around the edges and set in the middle. Remove from oven and cool in the pan for 10 minutes. You can recut the squares while the cookies are still warm. Remove the cookies from the pan and let cool fully on a wire rack.

  6. Store in an air-tight container for as long as they last you. They get a bit better the next day!
